Product History/ Misc. Info Named after the city of Leyden where the cheese was originally made. Leyden has 42% fat I.D.M. and tastes therefore a little dryer than a Gouda. In Holland's "Golden Century", the 17th century, they had colonies all over the world from where they brought various herbs and spices. In the city of Leyden the exotic cumin and caraway seeds were put in the cheese.
