Different sorts of sambals or pepper condiments are to be found in many parts of the Far East. Although the main ingredient is invariably fresh red peppers, sambals come in a wide variety of tastes ranging from the fierce heat of the bright red "Sambal Oelek", to the milder spicier taste of the darker "Sambal Manis". Served straight from the jar, sambals add extra zest to a wide range of foods. Remember though that they can pack quite a punch, so try a little first.
