'Koopmans' has three different types
of pancake mixes:
- Speciaal / special - original pancake
mix
- Eieren / eggs - only requires you to
add water
- Granen / grains - prepared with four
different types of grains
Below is the 'eggs' pancake mix recipe
(all these types of pancake mixes are made in similar ways).
- Pour the flour into a mixing bowl and
add water;
- Stir constantly, until the fairly thin
batter is smooth and there are no lumps;
- With a small ladle, pour batter into a
medium to hat greased pan, letting the batter reach the edges by
manipulating the pan.
- Flip the pancake over once to lightly
brown evenly on both sides.
Filling variations:
- Put strips of smoked bacon in the batter or on the unbaked top of the pancake before flipping it over.

- Put a slice of cheese on half of the wet top of the pancake and fold over the other half, baking the pancake just like an omelet.

- Put thin sliced or shopped apple in the batter or on the wet top of the pancake, baking the pancake just like an omelet. Serve with icing sugar.

- Spread marmalade, jam, (icing) sugar, 'stroop' (molasses), fruit, cheese, salami, sautčed mushrooms or whipped cream on the open-faced pancake and roll it up.
